Dayamata Shakti Prem made some delicious coconut snacks the other
day, we sent it out as a 'message of the day' and it was so popular
that we thought we would share it with everyone. I asked her for
the recipe to share with you.
Raw Almond/coconut/chocolate bars.
1 1/2 cup unsweetened shredded coconut
2 tbsp coconut oil
3 tbsp maple syrup
1 tsp vanilla
blend everything in a food processor shape into 12 squares
refrigerate for 40 minutes
chocolate dipping sauce
1/3 cup cacoa butter
1/2 cup cacoa powder
2 tbsp maple syrup
dash of salt
melt cacoa butter in a double broiler
whisk in remainder of ingredients
One can place a small amount of chocolate on a baking sheet,
then place the coconut square onto the chocolate, then drizzle
the chocolate over the top of the coconut or one can dip the
coconut squares into chocolate. If you wish you can place an
almond atop the square as well.
Ayurveda: This can be aggravating to Vata dosha as coconut is
cooling and chocolate has a bitter quality. So caution is
advised in the fall/winter or if one has high vata. This
should be cooling for Pitta.
